The Isoäidin (Grandmother`s) brand began almost three decades ago with the production of additive-free organic sauerkraut, pickled cucumbers, juice and mulled wine (glögg).
The most known of the fermented vegetable products are the traditional sauerkraut, pickled cucumbers and fermented vegetable salads. The products are made using natural lactic acid fermentation and / or through the use of carefully selected lactic acid bacteria strains derived from vegetable based materials.
In the first phase of the two phase fermentation process, the organic acids produced by bacteria act upon the carbohydrates and proteins of the vegetables, fractioning and dissolving them. As a result, the solubility of the fermented product is improved. The acids produced in the fermented products also promote the body`s absorption of minerals – especially iron. As the fermentation continues, the nutritional value of the products improves. The level of most the vitamin Bs increases, as well as vitamin K. In the sauerkraut vitamin C is also well preserved.
The Isoäidin sauerkraut is delicious as such, and it is also an excellent and quick side dish when lightly fried in a pan.
